Our beloved grandfather whom we called Paw Paw also known as Mr. Chico by all of his colleagues in the Louisiana Superdome was the head executive of Food, Beverage, and Banqueting for over 24 years, and the best grandfather that anyone can ever ask for.
Regardless, if it was the NFL Super Bowl, New Orleans Saints Football, NCAA, MLB, NBA, Endymion Parade, Concerts, Boat shows or any other event both small and large. It was Paw Paw job to ensure that world class service was provided to each guest as it has been known around the world that New Orleans food, service, and hospitality is definitely in a league of its own, and Paw Paw was the best at enhancing each guest experience when visiting the Superdome.
In April of 2015, with no prior experience in BBQ we recognize an opportunity to serve bbq in Spring, Texas. After 6 months of trial, testing, leasing a food trailer, hiring an outside company to smoked our meats with our homemade rubs, and building relationships in the community, as we garner feedback, while serving our guest bbq on Cypresswood Dr. as Cypresswood BBQ. We decided it was time to launch our official bbq brand that we can be proud of.
After 3 months of hard work being hands-on building our first food trailer, we launched Paw Paw Chico BBQ December 23, 2015
Initially, we didn't know how popular Texas style bbq was, but quickly we seen where it was going as it has been rapidly spreading across the world, we only knew that we wanted to be part of an amazing industry.
As our guest would arrive to try the new bbq spot Paw Paw Chico, many would ask "Do you have east Texas or west Texas bbq?"
"I don't know, we're not from Texas. We serve Tex-Orleans bbq!"
"Tex-Orleans bbq?" as our guest responded looking puzzled.
"Yes! We provide you best of both worlds with the Texas slow smoke and the New Orleans creole seasonings that has a savory flavor in every bite."
Not being sure what the difference is between east & west Texas bbq, and being perplexed by the question not being from Texas, but by way of New Orleans, LA. Our goal was to create our own niche that will highlight the Texas slow smoke style, while also staying true to our cultural roots of New Orleans, LA.
and there, the only Tex-Orleans BBQ in the world was created.
